Banana Egg Pancakes
|I am a breakfast lover, through-and-through! If you think of food as fuel, then you probably are too. After long workouts I tend to get really hungry the following morning. But sometimes the only hearty breakfast options we crave are filled with sugar or empty carbs. Good thing I just discovered this simple two-ingredient recipe for pancakes that is making life SO GOOD in the mornings! Bananas and Eggs. It’s so easy and so healthy. Give it a try :)
p.s. I’m sorry for the less-than-fancy food photo! My thoughts while taking this were “should I take longer to make this look pretty…or should I go for a bike ride?” I’m sure you can guess what I picked ;) I hope you don’t mind my straight-forward food posts!
Ingredients:
- 1 Banana
- 2 Eggs
- Coconut Oil Cooking Spray (not required, but a great alternative to other cooking oils)
Directions:
- Mash ripe banana well, add in whisk eggs.
- Warm non stick or cast iron pan to medium, spray with oil. Cook silver dollar size pancakes 30 seconds on each side and serve.
- (Cook on low to avoid burning. Option to use a small amount of agave on pancakes).
